Raw Fudge Brownies with Cacao Frosting

I hope you are all enjoying your week – it’s almost the weekend! These brownies will help get you through the last few hours in work whilst providing you with a variety of vitamins such as A, B, B6 and E.

These brownies are a recreation of The Hardihood’s that I tried during my adventure in London. The reason they stood out so much to me was the light, fluffy frosting on top that perfectly complimented the gooey texture of the brownie. Utter luxury that your taste buds will thank you for.

RAW BROWNIES:

180g packets x 2 Medjool Dates, pitted (available in SuperValu)

4 Tablespoons Coconut Oil melted

6 Tablespoons Raw Cacao Powder

1/2 Teaspoon Vanilla Extract

2 Tablespoons Tamari

3 Tablespoons Chia Seeds

1/2 Ripe Avocado

1/2 Cup Pecans or Cashews

1 Tablespoon Cacao Nibs

Blend all of the ingredients together in a blender (I used a Nutribullet), except for the nibs, until all the ingredients have combined to make a smooth, gooey texture. Add a little water if needed. Add the nibs to the mixture and combine, then place in a tin (lined with parchment paper). Use a glass or rolling pin to ensure the mixture is spread across the entire tin, leaving no corner empty. Place in the freezer to set for 1 hour.

 

CACAO FROSTING:

1 cup Medjool Dates, pitted

¼ cup Cacao Powder

¼ cup Coconut Oil

¾ cup of Water

Blend all of the ingredients in a food processor or blender until all of the ingredients have combined, creating a fluffy texture. Wait until the brownies have been in the freezer for the hour before lathering the frosting on top. Once the frosting has been placed onto the brownies you can eat them whenever you wish! I would recommend leaving it for another hour or 2 or overnight (if you can resist the temptation😉)

Belfast Bites: Raw Food Rebellion

This is a post from my old blog where back in August 2015 I heard through the grapevine about an AMAZING vegan restaurant in Belfast called Raw Food Rebellion.

Raw Food Rebellion is a restaurant that offers vegan, dairy free, gluten free, and refined sugar free meals and desserts (Winning!), and it is located  on the Lisburn Road in Belfast (the opposite side of the road from M&S and on down a bit towards The Chelsea).

Raw Food Rebellion is all about revolutionising how we eat and boy does it deliver.

 

I had a feeling that Raw Food Rebellion was going to live up to my high expectations and I can honestly say it actually exceeded them. It could easily compete in the healthy eating market in Dublin. In fact, they do the best healthy alternative treats I have ever tasted so far (those Bliss Balls are to die for) Everything is simple yet so creative at the same time and the attention to detail is truly beautiful.

 

WHAT TO ORDER:

When I visited the café have just opened so they were doing a soft opening to see which dishes are the most popular so there was no official set menu yet but I can say with great confidence, you will not be disappointed with whatever you order.

I was only in Belfast for two days so I stocked up on whatever I could get my hands on. Both of my main meals, I had the detox salad one day and the tacos the next, were just so delicious I didn’t want them to end. I loved how fun and creative the names of the drinks were e.g. “Taylor Swift (Just Shake it off)” and “The Stevie Wonder” (my personal favourite).  Now I was not prepared for just how mouth-wateringly good the desserts/treats would be, holy shit.  I honestly wanted to just clear the shelves and take all of the treats home with me.

I tried the peanut butter cups, Ferrero Rocher bliss balls, brownie and cheesecake (spread over the 2 days just to play it cool and pretend I was not really dying to eat them all at once) and they were all so so tasty, I could not pick a favourite.

PRICE:

2 main meals, a large smoothie and 2 desserts cost me just under £15 which is under €21, pretty damn good if you ask me and absolutely worth every cent.

TIP:

Raw Food Rebellion is already proving to be very popular so get down early to ensure you get what you want. If you already know what you want you can easily pre order it if you wish. A lot of customers pop in on their way to work to collect their meals for the day, which is a brilliant idea.

Verdict: Clean Candy heaven.

I loved everything about it, the food, the attention to detail, the decoration, what it stands for. Everything. I was chatting to one of the owners, Caroline, and she was so friendly as were the entire staff (I loved how they are called “Raw Food Rebels!”). There is such a relaxed atmosphere about the place. Like I said, the treats were so good I could easily justify the hour and a half drive just to buy one.The only thing I would fault is that they are not in Dublin😦 (Please come to Dublin!)
